The Course

A hands-on series in a commercial kitchen that goes from forgiving water-bath jams to low-acid pressure canning. Members follow tested recipes only, learn why each rule exists, and take home jars they made themselves.

What Members walk away able to do

  • Know which foods need a water bath and which need pressure
  • Follow tested recipes exactly, and know why
  • Vent, pressurize and hold a canner correctly
  • Check seals and store jars safely
  • Spot a jar that should never be eaten

Draft outline

A starting point. You shape the final version with us.

  1. Week 1 — Acid, botulism and equipment; a water-bath jam
  2. Week 2 — Pickles and tomatoes with added acid
  3. Week 3 — Pressure canning: venting, pressure and timing
  4. Week 4 — Low-acid batch on their own, with checks

Who we're looking for

  • An experienced canner (Master Food Preserver or extension training a plus)
  • Strict about tested recipes
